A 35-cover restaurant that can quickly become a 75-cover restaurant when the sun comes out is a unique challenge. It requires a particular kind of chef: adaptable, organised and always ready to step up a gear when necessary.
 
This is a busy breakfast, brunch and lunch operation, serving around (Apply online only) covers at breakfast and another (Apply online only) across the rest of the day .
 
Tables turn quickly, the kitchen is compact and storage is tight. Good ordering, organisation and the ability to deliver fast, consistent short-order food at volume are absolutely key.
 
But... you won't be doing it without support.
 
There are strong, stable senior chefs in position and regular support from an Executive Chef, while a central prep kitchen takes care of stews, soups and the bigger production jobs.
 
That makes this a fantastic opportunity for a Head Chef looking for a role that offers genuine work-life balance, or a very capable Sous Chef ready to take ownership of their first kitchen.
 
 
What We're Looking For
Someone who can:

• Run a quick, organised kitchen and maintain standards at serious volume
• Keep tight control of ordering, stock, GP and labour
• Lead and retain a good kitchen team
• Contribute ideas to four seasonal menu changes each year

This isn't about reinventing the menu every week. It's about running a busy kitchen exceptionally well .
The Package

• Up to £35,000 DOE + £6,000-£8,000 TRONC
• 10% quarterly bonus linked to commercial performance, audits and staff retention
• 48 hours over five days, predominantly daytime with most finishes around 6pm
• Proper operational support, including centralised prep
• Quarterly overtime review, with additional logged hours paid pro-rata

All working hours are recorded through the rota system. The principle is refreshingly straightforward: nobody should be working for free.
 
If you're quick, organised, commercially switched-on and enjoy the challenge of making a compact, high-volume kitchen run properly, this could be a very good Head Chef role for you.
